Paul Milne – Owner/Chef
For 15 years Paul was the owner and chef of award winning 208 Talbot restaurant in St. Michaels. He and Candace purchased The Oaks in 1997 and lovingly restored it to its former glory. After selling 208 Talbot in 2005, Paul came over to The Oaks full time where he enjoys not being chained to the stove day and night! When not working, Paul enjoys boating on the Miles River.

Candace Chiaruttini – Owner - Innkeeper
During the period they owned 208 Talbot, Candi did it all. She was the pastry chef, maitre d, front of house manager and some nights, even a busser! These days, she also does a little of everything and will also assist you with helping to make your wedding dreams come true!

Tracey George – Wedding and Event Coordinator/ General Manager

Tracey began her hospitality career in the airline industry, then as a travel agency manager and eventually as agency owner and operator. After 5 years as an agency owner, Tracey was presented with the opportunity to partner with her Dad in the restaurant business. She sold her travel business and with her family as partners, successfully owned and operated a waterfront restaurant for more than 10 years. Subsequently, Tracey spent the next 5 years as the Event Manager for Orient Express at The Inn at Perry Cabin where she honed her skills in event sales and management in the luxury boutique hotel market. Most recently she worked for Hyatt Hotels as a Catering Manager until the opportunity to manage The Oaks was offered to her. Her expertise is calming nervous brides, coordinating every detail flawlessly and ensuring every bride has her perfect dream day. Working at The Oaks is her dream job and through all interations with Tracey - it shows!

Georgi Chauvin – Chef/Pastry Chef
An alumni of the Culinary Institue of America in Hyde Park, NY, Georgi graduated with her Bachelors in Hospitality Management in 2004. Having completed her internship on the Shore, she returned in 2005, lured by the sunsets and a job with a local restaurant and catering business. Georgi first joined the team at The Oaks in 2009 and has now become our full time chef, working with Paul preparing the renowned cuisine served at our weddings and events. Georgi's famous cakes are not only delicious...but gorgeous!

Annie Hynes – Innkeeper and Sales Associate

Annie brings a wealth of knowledge and experience with her to The Oaks. She welcomes every guest with warm and enthusiasm whether it is in person upon check-in or over the phone. Annie has great attention to detail and is very knowledgeable in the wedding planning process. In considering hosting your wedding or event at The Oaks you may have the opportunity to tour the property with Annie and experience her kindness in person. She will welcome your questions and provide you with all the answers necessary to ensure that you know you have made the right decision in hosting your wedding or event at The Oaks. When annie is not at The Oaks, she teaches knitting and operates her own jewelry design business. She is the mother of two teens and lives with her husband in Dorchester County.
